Here's an interesting post by Carkner on great Cymbalom Albums, which he originally posted in the Cymbalom section, but which I think also deserves a place here too.

The Art of the Gipsy Cimbalom This is probably one of my favourite "folkloric" albums of all time. it tops all of his other albums which try to mix in too many other elements.
Art of the Cymbalom: Music of Joseph Moskowitz 1916-1953 Similar title! But this is a virtuosic Jewish player who lived in the USA during the mid-20th century and would play in his restaurant. He played more general east-european and european pieces instead of klezmer, though, so I put him in this list too.
Maramaros: The Lost Jewish Music of Transylvania This is one of the albums that introduced me to cimbaloms/tsimbls. It's a hungarian folk band playing the unique type of jewish music that once existed in Transylvania--somewhere between klezmer and hungarian music.
Robert Garfias: Field Recordings Also, check out this sity by ethnomusicologist Robert Garfias, he has a ton of mp3s available for download including a lot featuring Romanian cimbalom playing.
